Inspirational Publishing
As of now, WhiteFire Publishing is open for submissions! This small press has been open since 2005. If you are not familiar with them, check out their submission guidelines. They publish both fiction and non-fiction, and will take un-agented queries.

I looked into them once and though they did only ebooks--will have to look again.
